Greener than Green Salad

When I say Green Salad, I don't mean lettuce and cucumber. This is my go-to salad and my friends all know it's going to be on the table pretty much every time they come around (and it's always a crowd pleaser!)

  • Steam the broccoli for a few minutes until they are JUST cooked (still crunchy).
  • Arrange the spinach leaves on a platter, top with the cooled broccoli and slices of avocado.
  • Pour the dressing over and serve at room temperature (or see variations below to make it even better)

Variations

  • Chargrill the broccoli instead of steaming them – get the pan REALLY hot and make sure they get a few black bits on
  • Add air-fried Brussels sprouts (halve, coat in olive oil, sprinkle with salt and airfry till brown)
  • Add steamed or griddled green beans
  • Add cooked green peas
  • Add feta cheese
  • Sprinkle chopped walnuts or dukkah
