
Greener than Green Salad

When I say Green Salad, I don't mean lettuce and cucumber. This is my go-to salad and my friends all know it's going to be on the table pretty much every time they come around (and it's always a crowd pleaser!)

Ingredients
- 250 g baby spinach
- 200 g tenderstem broccoli
- 1 ripe avo
- 120 ml Mother City Fish Salad Dressing
Instructions
- Steam the broccoli for a few minutes until they are JUST cooked (still crunchy).
- Arrange the spinach leaves on a platter, top with the cooled broccoli and slices of avocado.
- Pour the dressing over and serve at room temperature (or see variations below to make it even better)
Variations
- Chargrill the broccoli instead of steaming them – get the pan REALLY hot and make sure they get a few black bits on
- Add air-fried Brussels sprouts (halve, coat in olive oil, sprinkle with salt and airfry till brown)
- Add steamed or griddled green beans
- Add cooked green peas
- Add feta cheese
- Sprinkle chopped walnuts or dukkah
